Pan-fried Grouse BBQ Sauce Recipe

Pan-fried grouse with soy and pomegranate BBQ sauce, buttered leeks and sweet potato.

Pan-fried Grouse with BBQ Sauce Recipe

Ingredients

1 pack Wild and Game grouse breasts
A glug of olive oil
A knob of butter

For the sauce

4 cloves garlic, minced
4 tbsp tomato ketchup
2 tbsp light soy sauce
100 ml chicken stock
2 tbsp honey

For the leeks

2 large leeks (about 300g)
A knob of butter
2 cloves garlic, minced
For the sweet potato mash:
2 large sweet potatoes – about 600g
A couple of generous knobs of butter
Salt and pepper

Instructions

1. Microwave the potatoes for about 8 -10 min or until soft (check and turn part way
through). Let the potatoes rest until they have cooled enough for you to be able to
handle them.
2. Meanwhile, fry the grouse breasts in the butter and olive oil for about 3 minutes
each side or until cooked to your liking. Set aside to rest.
3. Add the garlic to the pan and cook for a couple of minutes on a low heat.
4. Add the other sauce ingredients, stir and cook for a couple of minutes then turn the
heat off.
5. Scoop the potato flesh out of the skins into a bowl, add the butter to the bowl and
mash. Taste and add salt and pepper to taste.
6. Heat a knob of butter in a pan and add the 2 cloves of minced garlic. Cook for a
minute and then add the leeks. Cook until soft and season to taste.
7. Place the leeks, mash and grouse on a plate and pour a generous amount of the
sauce over the grouse
