Cooking instructions
Roasted
This technique works beautifully for whole birds. Preheat your oven to 180C/165C fan/350F/gas mark 4. Wash the pigeon inside and out and pat dry, then heat some olive or vegetable oil in a pan and fry the pigeon until lightly browned. Place on a hot, oiled roasting tin and cook, basting occasionally, for 10-12 minutes, or a couple of minutes more if you want it well done. Rest for 5 minutes before serving.
Pot roasted
This is another great way to cook whole birds. Preheat your oven to 220C/200C fan/425F/gas 7. Wash the pigeon inside and out and pat dry. Heat some oil and butter in a Dutch oven or similar hob and oven-proof lidded pot and fry the pigeon until lightly browned. Add other ingredients of your choice – for example, stock, wine and vegetables. Bring to a simmer then put the lid on the pot and place in the oven for 20 minutes. Remove and rest for 10 minutes before serving.
