Heat the oven 190C
Place in large Frying pan, Season and rub with oil, place in the pan fat side down, cook until golden brown.
Turn the venison over and cook for further two minutes, transfer to a baking tray and then in the oven for 8-10 mins for pink medium rare.
Remove from oven and then let rest for 5 mins, once rested slice and serve
Although every care has been taken to remove bones, some small pieces may remain.
