Pigeon is a rich, succulent, fine grained meat that’s much darker than chicken. Wild pigeons eat a varied diet that includes berries, seeds, nuts and greens, all of which add to the flavour of the meat. A real delicacy that tastes best cooked pink, pigeon has a complex, earthy, gamey flavour with a touch of minerality. It pairs well with strong flavours, from blue cheese to berries and bacon.
