Perfect as a smaller roasting joint for 2 people as a centrepiece on a Sunday, our lamb rack ranges between 3-8 bones but the weight will be the same.

Remove from the fridge about 30 minutes before cooking to bring to room temperature. Sear in a frying pan, fat side first, for a couple of minutes until golden, then turn and sear the other side for a minute. Transfer to an oven preheated to 220C/200Fan/gas mark 7 and roast for 8-25 minutes depending on how well done you want it. Rest for 5 minutes before serving.
