Remove from the fridge 30 minutes before cooking. Lightly oil the steaks, season them and grill or pan fry on a high heat for 2 minutes each side, then turn the heat down to medium low and cook for a further 4 minutes each side for medium rare, or adjust cooking time to suit your taste. Rest for 5 minutes before serving.
