Remove from the fridge 30 minutes before cooking. Oil the steaks or rub with a little duck fat and cook on a hot grill or griddle pan, or pan fry on each side until nicely browned, then continue to cook on a medium-low heat for about 5-8 minutes each side until firm to the touch. Check the meat is cooked through before serving.
