- Ensure product is fully defrosted
- To roast, preheat the oven to 220°C, gas mark 7
- Place the duck in a roasting tin, prick and rub salt into the skin
- Place the bird on its side and cook in the centre of the preheated oven for 35-40 minutes
- Baste frequently during cooking and halfway through the cooking time turn the duck on to its other side
Do not reheat once cooled.

Rather disappointed in the size of this “Mallard” – it is about a third of the size of the one in the picture above and fits in one of my hands (and I have small hands). Hubby belongs to a shoot and has never brought home a prepared Mallard as small as this. I should have bought 2, one each. Will think of something else for Sunday lunch, I’m afraid. Had the average weight been given in the description I could have made an informed choice whether to buy one or several. Sorry.

Very disappointed with the size of this. Expected more that a 100g bird. Pointless cooking for one person. Should be clear on the website what the size is when ordering. Shame because we’ve never been disappointed in any of our orders previously.
