Venison Koftas Recipe

Some tasty Venison Koftas with pitta bread and salad. A perfect light lunch or snack.

Venison Koftas Recipe

For the koftas

500g Wild and Game minced venison
Half a tsp chilli
1 tsp cumin
1 tsp coriander
2 green chillies, finely chopped
1 tsp minced garlic
1 tsp turmeric
1 tsp sea salt
1 bunch fresh coriander, finely chopped
1 medium onion, finely chopped

For the salad

1 red onion, diced
Half a cucumber, diced
2 large tomatoes, diced
50ml olive oil
50ml lemon juice
1 tsp minced garlic
A handful of coriander
For the mint sauce
6 tbsp plain yoghurt
A handful of mint, finely chopped
1 tsp garlic, minced
1.5 tsp lemon juice

To serve

6 pitta breads
Chilli sauce of your choice.


1. Place all the kofta ingredients in a bowl and mix together thoroughly, using a wooden spoon to break up the mince.
2. Shape into 12 burgers. If there’s time, place in the fridge for 1 hour to firm them up.
3. Meanwhile, make the salad: place the vegetables in a bowl, mix the lemon juice, olive oil and garlic together and pour over the vegetables. Mix thoroughly.
4. Cook the koftas under a medium grill for 4-5 min each side until cooked through.
5. Serve in the pitta bread with the salad, the yoghurt sauce and the chilli sauce.
