Super Beany Venison Chilli Quesadillas Recipe

Ingredients
Leftover super beany venison chilli
Tortillas
Grated Cheddar: 25g per tortilla
Red onion: half a small onion per tortilla, finely diced
Green chilli: half a small chilli per tortilla, finely diced
Avocados: half per tortilla, diced
Lime juice
Fresh coriander
Sea salt
Optional extras
Your favourite hot sauce
Soured cream
Method
1. Heat the chilli.
2. Heat a grill pan.
3. Place a tortilla on the grill pan and cover half of it with a layer of chilli. Top this with the diced onion, green chilli and cheese. Fold the tortilla over and cook, turning, until the cheese has melted and the tortilla is lightly browned,
4. Place the avocado in a bowl and drizzle with lime juice. Add a little sea salt and a sprinkling of fresh coriander and stir.
5. Serve each tortilla with the avocado and, if desired, your favourite hot sauce and a dollop of soured cream.
