Pigeon Breast Recipe by Zuzana Gresova

Pigeon breast
Olive oil
Freshly grated ginger
Lemon juice
Herbs and spices of your choice
Sweet or white potato
Salt and pepper


  1. Mix the olive oil, lemon juice, ginger, and spices – use about two-thirds oil to one third lemon juice.
  2. Marinate the pigeon breast for an hour or two.
  3. Meanwhile, boil the potato, mash it with butter, and season to taste.
  4. Heat some olive oil and pan-fry the pigeon breast until cooked to your liking.
  5. Meanwhile, rinse the spinach, add to a pan with a little butter, and put the lid on until wilted. Add a dash of cream and season to taste.
  6. Allow the pigeon to rest for a few minutes then serve with the mash and spinach.
